I chose to share my Spanakopitta recipe, as it’s a recipe I’m always asked for. Everyone loves it. I remember my mom always made it, and I used to watch her. She would make her own filo pastry, and I used to do the same, but nowadays, with the daycare and everything, I just don’t have the time!
My version is different than the kind you get at the store, because mine has rice in it. One of the children at my daycare has always loved mine, but won’t touch the store bought. So I make her a whole pan sometimes. I love how happy my Spanakopitta makes everyone.
