Meet Karina: An Exciting and Challenging Journey

I came to Canada looking for new opportunities in search of personal and professional growth. This journey has been both exciting and challenging. Starting over in a new country means learning how everything works from scratch — from the weather to the way people communicate. One of the hardest parts has been being far from my family and familiar surroundings. But at the same time, I love how welcoming people have been, the new bonds and friendships that Canada has given me and how much nature there is to explore. Every day feels like an opportunity to grow and discover something new, and that keeps me motivated, growth and resilience.
Do you think that food/meal times here in Canada can also help people from different backgrounds come together to learn about and understand each other?
Yes, definitely. Sharing food is one of the easiest and most beautiful ways to connect with others. In Canada, where so many cultures live together, mealtimes can be a great opportunity to learn about each other’s traditions, values, and stories. A simple dish can open up conversations and create a sense of community, even among people who just met.
In Mexico, la hora de la comida (mealtime) is more than just sitting down to eat. It’s sacred. It’s when the family gathers, stories are told, laughter is shared, and everyone reconnects after a long day. Whether you’re five or eighty-five, you’re expected at the table. It’s not just about food — it’s about family, laughter, and stories passed around the table.
No matter how busy life gets, sitting down together says: we are here, we are home, we are family. Even if all we have is a simple dish, we share it with love—and often, pico de gallo is at the center.
This fresh salsa is as colorful as our culture and incredibly easy to make. Here's my family’s version:
🌈 Pico de Gallo Recipe (Serves 4–6)
Ingredients:
3 ripe tomatoes, diced
1 small white onion, finely chopped
1 jalapeño (This is optional and you can choose any other type of chili), finely chopped
A handful of fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Instructions:
1. Mix everything in a bowl.
2. Taste and adjust salt or lime.
3. Let it sit for 10 minutes to blend the flavors.
That’s it! It’s perfect on tacos, grilled chicken, with tortilla chips—or even on toast.
